Gluten and Casein Urine Testing

Gluten is a protein that comes from wheat and related grains. Casein is the protein that comes from dairy products. When these proteins are incompletely metabolized, active intermediates called gluteomorphin (from the gluten) and casomorphin (from the casein) result.

These peptides have been shown to bind to opiate receptors in the brain, thus mimicking the effects of opiate drugs like heroin and morphine. The process can create a physical addiction to wheat and dairy, often see in children with autism and those that are “addicted” to carbohydrates.

A simple urine test to measures the levels of these peptides excreted in the patient`s urine can determine how well these two foods are being metabolized and is an indication of the health of the GI tract.

Gluten sensitivity can also be associated with celiac disease.
